Abstract

Using a bibliometric approach, this study aims to investigate the development of gastronomy and innovation themes in the academic literature, with an emphasis on the years 2020–2025. In the context of contemporary scientific discourse, innovation is now viewed as a strategic element of consumer experience, cultural production, and sustainable growth processes instead of only advances in technology. Gastronomy becomes a dynamic field that embraces development in a multidimensional approach in this paradigm-shifting context. The database maintained by Scopus was used to create a dataset of 2,182 scholarly publications released within the given time frame. The Biblioshiny interface and the Bibliometrix R package were used to perform bibliometric studies. The study looked at citation networks, author and journalic patterns, keywords co-occurrences, conceptual grouping, and the temporal distribution of articles. The study examined citation networks, author and journalic patterns, keyword co-occurrences, thematic grouping, and the periodicity of publications. The findings show an important increase in both the amount and variety of research focused on innovation and gastronomy, highlighting the growing importance of interdisciplinary collaborations. In the literature, prominent themes like "quality," "impact," and "product innovation" have taken the forefront. In particular, the concepts of "experience design," "sustainable gastronomy," and "consumer innovation" tend to have formed the conceptual basis in present studies. Additionally, bibliometric indicators demonstrate that the subject matter is conceptually related to subjects like food technology, marketing, and behavioral sciences and is methodically molded by methods that utilize data. The study draws its conclusion that gastronomy's innovation-focused academic output is institutionalizing progressively and has grown into an extensive area of study.
